  • 1 cup mango puree (from 2-3 ripe mangoes)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • Whipped cream (for garnish)
  • Fresh mango slices (for garnish)

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated.
  3. Press the mixture into the bottom of a 9-inch (23cm) springform pan, creating an even layer.
  4. Bake the crust in the preheated oven for 10 minutes. Remove from the oven and set aside to cool.

  1. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  2. Add the mango puree, granulated sugar, and vanilla extract to the cream cheese. Mix until well combined.

  5. Place the springform pan in a larger baking dish. Fill the larger dish with hot water, creating a water bath.

  7. Bake for about 50-60 minutes, or until the edges of the cheesecake are set but the center is still slightly jiggly.
  8. Turn off the oven and leave the cheesecake inside with the oven door slightly ajar for about an hour.
  9. Remove the cheesecake from the oven and let it cool completely at room temperature.
  10. Once cooled, refrigerate the cheesecake for at least 4 hours or overnight to set.
  11. Before serving, remove the sides of the springform pan.
  12. Garnish with whipped cream and fresh mango slices.
  13. Slice and serve the Mango Cheesecake chilled.
